Mango. Mango pie. If Forrest Gump's friend Bubba had
a mango tree at home, he would have been as obsessed
with the fruit as he was with shrimp, and thought of
as many ways to serve it.
Certainly,
there are many ways to eat this much sought-after fruit,
and everyone has their own "best recipe." Celebrity
chef Chai Chaowasaree of Chai's Island Bistro
shared one of his many mango recipes, which he serves
with many of his dishes, including duck tacos, mahi
mahi, chips, lobster, and more.
Ingredients:
2 tablespoon of diced ripe mango (about ¼ inch)
2 tablespoon of diced tomato (about ¼ inch)
½ tablespoon of chopped onion
½ tablespoon of chopped Chinese parsley
¼ tablespoon of lemon juice
¼ tablespoon of Balsamic vinegar
¼ tablespoon sugar
A pinch of salt and Tabasco to taste
To prepare simply mix all the above ingredients together. Enjoy!
