Yield: 12-16, 4-oz. slices

Shelf Life: 3 days mix, 3 days cooked

Prep time: 1.5 hrs

Tools: 6qt mixer, paddle, measuring cup, sauté pan, scale (optional),sheet pan(s), loaf pans (3 or 4)

 

 

 

 

 
 

Ingredients                                      Quantity

Onions, yellow, diced ¼in                       ½ lbs

Celery, diced ¼in                                  ¼ lbs

Oil                                                       3 tbsp

Panko Breadcrumbs                              ¾ cup

Tomato Juice                                        ¾ cup

Ground Beef, 80% lean                         2 ½ lbs

Italian Sausage                                              1 lbs

Eggs                                                    3 large

Salt                                                     ½ tbsp

Ground Black Pepper                            ½ tsp

Directions

  1. In a hot sauté pan add the oil, celery and onions.  Cook until tender, then remove from the heat and cool.
  2. In the mixing bowl, pour in the tomato juice and panko bread crumbs and allow to soak for a minute.
  3. Add all remaining ingredients to the cowl and mix on medium until all of the ingredients are completely incorporated.

*** HOWEVER, DO NOT OVER MIX ***

  1. Press about 1 lb of mixture into each loaf pan, making sure to push into the corners, while leaving no air holes.
  2. Place 2 sets of loaf pans on each full sheet pan and bake at 350 F for 30-40minutes with the fan on low, or until an internal temperature of 165 F is reached.
  3. Remove from the oven and allow to cool for 15 minutes.  Remove each loaf from the pan, wrap and place in the cooler until completely cooled.
  4. When completely cooled, slice each loaf lengthwise into (3) 4-oz. pieces.
  5. Wrap the slices in packages of 2 for lunch, 3 for dinner.
  6. Place in line ready container, label and refrigerate.
