Fruits of passion are always in fashion

   

Most people associate summer with the bounty of fruits this season brings. It's no surprise, then, that Chef Rob Dennis of Tower Grill tries to make use of these flavors in his menu specials.

 

Make this refreshing Lehua Cocktail for yourself or a party. Serve up some decadent Banana Bread Pudding while you're at it. You've worked out at Hawaii Athletic Club, you deserve it!

 

As you savor the last, lazy days of summer, cool off with a refreshing blend of our favorite fruits with this cocktail from Tower Grill. The Lehua Cocktail tastes best at sunset when you are taking in the Harbor view from the Tower Grill’s second floor lanai. But it goes well with brunch, too!

Lehua Cocktail from Tower Grill

2 oz. Absolut Citron Vodka

1 oz. Sweet and Sour

1 oz. Pineapple Juice

1 oz. Sprite

1 oz. Orange Juice

1 oz. Cranberry Juice

Shake and serve in a tall glass garnished with an orange slice and a sprig of mint

 

“I also love desserts,” says Chef Rob Dennis. “This is something that is decadent and comforting, plus it has bananas to remind you of the flavors of Hawaii.”

   

 

 

 

Chef Rob’s Banana Bread Pudding

12 whole eggs

1 qt. milk

2 cups heavy cream

2 cups sugar

1 tbsp vanilla

pinch of salt

2 cups ripened banana

1 loaf white bread

Mix the first 6 ingredients well with electric hand mixer.  Cut bread in to small cubes. Add to egg mixture and soak for 10 -20 minutes until all bread is coated with the mixture.

Meanwhile, preheat oven to 325 degrees and place rack in the middle of the oven. Spray a 9-inch cake pan with non stick spray or butter.

Slice bananas and place into mixing bowl. Fold the bread in. (Don’t over mix.) Pour the entire mixture into the pan. Bake the bread pudding for 40 minutes or until skewer comes out clean.

Let the bread pudding rest for 15 minutes. Slice like a cake. Makes 12 pieces.

Add ice cream to really make a decadent dessert!
